Workers process the harvested quinoa in a small factory in Challapata, Bolivia. .The nutritional qualities of the seed have generated a new export market for South American farmers. Demand for the grain-like seed are increasing due to its nutritional benefits. Quinoa contains more protein than any other "grain" and includes all eight essential amino acids needed for tissue development. Quinoa has been cultivated in the Andes since 3000BC.
